I hope you and your family had a great, happy, peaceful fun Easter and that this shorter week is kind to you.
I love finding new easy recipes that are also healthy. Here are some for you to try this Easter, or anytime. Bear in mind that I don’t cook fancy things, and so I would not include a recipe here that I wouldn’t use myself.
Easter Snack Platter
- carrot strips
- cheese cubes
- savoury biscuits such as jatz or similar
- celery strips
- avocado dip (or hommus dip or similar)
- baby tomatoes
- nuts
- berries
Yoghurt dipped Strawberries
- yoghurt
- strawberries
Rocky Road
- walnuts
- almonds
- other nuts
- berries – raspberries – blueberries
- coconut
- dark chocolate
Melt dark chocolate
Mix all ingredients together
Spoonful dollops into patty cases and let them set – yum!
Long Covid – is real.
After getting covid, we need to give ourselves time to recover.
For weeks after we think we are recovered, we may still be feeling more aches and pains than normal. We may feel tired, really worn out exhausted, more than ever before. Mental and physical fatigue. Time will heal this. Some of us will also suffer from breathlessness and other respiratory issues, and depending on our general health and wellbeing, we may experience a range of symptoms specific to our own health.
For the unvaccinated, the symptoms may be more severe and last longer.
The good news is, over time we will recover. It may take a few weeks or a few months, again, this seems to be specific to the individual.
Tips for a healthy recovery:
- be gentle and kind to yourself
- rest up, your body will tell you how much rest it needs
- work on mental as well as physical health
- eat healthy foods such as fruit and veg, and include garlic, ginger, turmeric, vitamin C, in our daily intake
- limit junk foods and alcohol
- find an activity you enjoy, craft, video games, watching videos, reading, and take as much time to heal as you need to
- talk to your doctor for more ways to help during this time
